The King Oyster Mushroom, Pleurotus Eryngii is definitely the best of culinary oysters. Its visually fat stems are tender unlike most oysters, and they are frequently used sliced to make vegan scallops. Medicinally they are as potent as Blue oysters. A hybrid was created between the Blue Oyster Mushroom and King Oyster; resulting in the King Blue Oyster. One of the noticeable differences between the two, is its ability to grow in warmer temperatures then your average King Oyster.

King Oysters grow differently according to where they are allowed to fruit from a bag or bucket, humidity, and temperature. The King Blue was growing within a sour cream jug, and fruited on top. (Virtually no stem)

King Oysters are usually better to top fruit instead of side fruiting for optimal weight and good appearance.

The Blue Oyster Mushroom, Pleurtus Ostreatus, is likely the most medicinal mushroom of all Oyster Mushrooms. Blue Oyster Mushrooms are a natural source of the statin drug Lovastatin.

Most oysters contain this substance to some degree besides being a highly medicinal mushroom, Blue Oysters are one of the best mushrooms for stir fry and soups. They also make a great topping for steaks. Like most oysters, they can be used bioremediation projects, able to metabolize both organic and chemical contamination. They prefer cooler temperatures though some varieties can tolerate warmer climates.

Hericium Erinaceus, Lion's Mane is likely on the top list of gourmet and medicinal mushrooms. It is a delicious mushroom in stir fry, soups, stews, vegan chicken fritters, and lobster. The list could go on! What's more important to know about Lion's Mane, is that it contains strong neurogenerative properties. This means Lion's Mane can regrow damaged nerves and brain cells, and in addition establish new neuro pathways. This makes it a nootropic. In natural medicine, Lion's Mane is also used for menstrual problems, menopausal issues, lung health, and anti-inflammatory. Many people use it in their coffee or as a coffee substitute, due to its gentle stimulating properties.
