The King Oyster Mushroom, Pleurotus Eryngii is definitely the best of culinary oysters. Its visually fat stems are tender unlike most oysters, and they are frequently used sliced to make vegan scallops. Medicinally they are as potent as Blue oysters. A hybrid was created between the Blue Oyster Mushroom and King Oyster; resulting in the King Blue Oyster. One of the noticeable differences between the two, is its ability to grow in warmer temperatures then your average King Oyster.

King Oysters grow differently according to where they are allowed to fruit from a bag or bucket, humidity, and temperature. The King Blue was growing within a sour cream jug, and fruited on top. (Virtually no stem)

King Oysters are usually better to top fruit instead of side fruiting for optimal weight and good appearance.
